-Poach or fry eggs
-Cut sweet potato lengthwise into 1/4 inch thick slices and place in your toaster to toast approx 2-4 times depending on the toast level of your toaster.
-Mash avocado with red chili flakes, salt, pepper and crushed garlic and set aside.
when sweet potato and eggs are cooked to desired cook level, layer avocado, and eggs on toast and enjoy! I use 1/2 an avocado per slice along with 2 eggs for 1 serving, approx. 348 calories 15g Protein 23g Carbs and 19g fat (healthy fats)
