Recipe of the Day - Sweet Potato Toast

Sweet Potato Toast is a fun and nutritious alternative to the typical eggs and toast breakfast! You can change it up and have nut butter and fruit, soft cheeses and lox, cream cheese and chopped nuts etc. Let your creativity flow with endless varieties to enjoy this as a low fat healthy meal and snack!

This recipe helps maintain level blood sugar, keeps you full and is safe for anyone with PCOS, leaky gut and digestive issues, diabetics, keto, paleo, low glycemic, low carb diets, and anyone looking to get healthier. By pairing a carb with a fat and a protein with every meal it keeps your blood sugar even, which makes it easier for people to lose weight and keep their energy levels up throughout the day :)


-Poach or fry eggs

-Cut sweet potato lengthwise into 1/4 inch thick slices and place in your toaster to toast approx 2-4 times depending on the toast level of your toaster.

-Mash avocado with red chili flakes, salt, pepper and crushed garlic and set aside.

when sweet potato and eggs are cooked to desired cook level, layer avocado, and eggs on toast and enjoy! I use 1/2 an avocado per slice along with 2 eggs for 1 serving, approx. 348 calories 15g Protein 23g Carbs and 19g fat (healthy fats)
